The existing kitchen at the Flemington Racecourse has had an extensive overhaul to make it an effective production kitchen capable of catering for the many hundreds of customers that attend the busy race days and VRC functions. New equipment such as temperature controlled plating area with conveyor plating, e-water throughout and a layout that has highly impressed Peter Roland catering who will be using the facility.
Chris Love Design is currently undertaking the design and documentation for the kitchen at 400 Gradi in Essendon. With existing outlets in Brunswick and the Crown Casino, the latest restaurant is expected to open in September and will comprise a traditional gelataria counter.
Popular Melbourne pizza brand, 400 Gradi is the brainchild of chef and V.P.N. Principal Johnny Di Francesco, who’s family hail from Naples in Southern coastal Italy – the home of ‘world’s best’ pizza. Johnny has a series of Pizza and Calzone outlets with the 400 Gradi Crown restaurant being the flagship of the group.

The resort central facilities incorporate the following uses in three single-storey organic form buildings:
– Reception, lobby and administration area
– Restaurant and bar (open to the public)
– Central kitchen and food service area
– Conference and function facilities (available for hire)
– Multi-purpose room (yoga, kids club, weddings)
– Lagoon swimming pool and kids play area
– Poolside café
– Day spa (open to the public).

The $2 billion Collins Square project is the largest of its kind currently under development in Australia and seamlessly integrates commercial, retail, public and civic spaces into one bustling precinct, with over 46,000 people forecast to visit the site daily.
Designed by award winning Melbourne architectural firm, Bates Smart, the master plan incorporates five interconnected commercial towers with separate architectural identities to ensure design synergy. The world class 14,000 sqm retail precinct, designed by Buchan Group, will deliver staff and visitors a varied and engaging retail experience. With Bar Nacional, Chiara, Long Shot and the acclaimed ‘Lunch Room’ already setting the benchmark, the retail mix at Collins Square will be complemented with convenience services, fashion, grocery and specialty retailers.
At completion, Collins Square will comprise 200,000 sqm NLA across five commercial towers, a two level 14,000 sqm retail precinct and the refurbishment of the Southern Good Shed.

Essendon Fields Events Centre – Melbourne’s newest state-of-the-art major events centre will accommodate all kinds of events from intimate occasions, corporate functions and launches to international conventions, grand scale celebrations and showcases. It will boast a significant porte cochere entrance lobby, large pre-function areas, state-of-the-art lighting, sound and broadcast facilities. The 1700m2 event space will feature flexible and sub-divisible column free areas and a covered outdoor space with landscaped surrounds that will provide the flexibility for major indoor/outdoor exhibitions and events.

The kitchen features a modular European cooking bank, complete with custom wood burning grill, a combined wood and gas fired oven, induction cooktops and a ventilated ceiling for extraction. Ewater technology was included for chemical free hand washing and sanitizing.
The end result is a kitchen that is delight to work in and plays a major part in the award winning produce driven food.
The Smith is one of Melbourne’s leading gastro pubs in the funky inner suburb of Prahran.
A restored and renovated former beer hall, The Smith presented design challenges that required careful consideration and solutions, in order to provide the operators with a functional kitchen and bar, whilst maximizing seating capacity.
Shoe horning the cooking equipment between structural columns and altering some internal walls enabled the inclusion of heavy duty cooking equipment. Working closely with the team of chef/owner, builder and kitchen contractor was particularly rewarding, not just for the satisfaction of seeing an efficient kitchen delivered on time and budget, but also for opportunity to taste Michael Lambie’s signature sticky pork belly with seared scallops and chilli dressing!
The kitchen servicing Trinity College at Melbourne University is indicative of the modern hospitality facilities now offered at leading tertiary institutions.
The existing kitchen required a major overhaul to bring it up to current food premises standards. This included a new layout to improve operational efficiency and all new floor, wall and ceiling finishes. The incorporation of a “high street” cafe offer preparing premium brewed coffee has been a welcome inclusion to college life.
New Asian Restaurant in Melbourne’s Crown Casino Complex. The theme inspired Asian hawkers style restaurant / servery required a galley style open plan kitchen to showcase the visual aesthetic and charm of asian style cooking. The fitout required close liaison with all stakeholders including architects, interior designers and stylists as well as Crown Facilities management. The project was delivered on budget and on time with no variations and defects.
Pinnochio’s Italian bistro and Pizzeria in Melbourne’s bayside suburb of Hampton was designed to cater to a busy and hectic family environment. The former bank building was totally gutted in preparation for the installation of a fully compliant kitchen, bar and associated stores and wash facilities.
The feature wood fired revolving base pizza oven was a unique piece of equipment that enables maximum throughput with reduced labour costs, including the ability to produce the popular 1m long pizzas!
The display coolroom showcases some of Italy’s finest ingredients. Can thoroughly recommend the slow braised lamb shoulder served with artichoke puree and basil pesto!!
The Conservatory is a 300 seat + premium buffet in Melbourne’s Crown Casino Complex, it is the main buffet used by the Crown Towers Hotel.
Multiple sittings per day over three main serving periods producing a variety of local and international food. Buffet fit out included an “open” kitchen incorporating Asian and Western cooking equipment in a modular suite, theatre cooking displays featuring Tandoor ovens, a carvery, a dedicated dessert station and a multi tiered seafood and cold food display.
Mamababa is the latest inclusion in the Press Club Group’s stable of restaurants. Collaboration with Joyce & Made Architects saw the delivery of a New York warehouse style eatery.
Upon entry patrons pass a glass enclosed, marble topped fresh pasta making station, complete with humidity controlled drying room. The open galley style kitchen produces authentic Italian inspired dishes with an emphasis on the fresh pasta produced onsite.
The Atrium Bar is one of the premium bar outlets in Melbourne’s Crown Casino entertainment precinct. Rear loading drinks fridges topped in crystal display screens and challenging back of house spatial allocations, required close coordination with interior designers and architects to ensure the clients operational requirements were met, the end result being a lavish and opulent bar.
The Jackpot Bar is a high turnover bar on the Main Gaming floor of Melbourne’s premier Crown Casino Complex.
Unique design solution for the bar operations saw the fabrication of fridges which are rear loaded with pre-chilled bottled beverages from an adjacent coolroom. The inclusion of a high volume automated glass washing station has improved this labour intensive aspect of the bar operations. The project was executed on time and on budget.
Chris Love Design has been contracted to design and refit RACV Resort facilities at Inverloch. The RACV Inverloch Resort is one of three major regional RACV Victorian attractions.
Scheduled to finish in early 2013, works are currently underway on extensions and renovations to the main lodge. Works include 80 seat Lounge bar, 250 seat open plan Ballroom, Pre function space for 200 people, Three large separate format Function Rooms, two separate Boardrooms, and increased Restaurant capacity to 150 seats.
The brief to Chris Love design encompassed completely refitting bar and hospitality areas including main kitchen, and secondary reheating kitchen to service function and boardroom ares. Bar and wet areas have also been redesigned and rebuilt.
RACV Inverloch is a first class facility, winning the 2011 Victorian Tourism Award for best Deluxe Accommodation. The redesign features clever environmental building design, and the new design will represent Victoria at the National Tourism awards.
Chris Love Design is currently undertaking the design and documentation of refits for the kitchens, bars and buffets at Qantas 1st and Business class lounges at a number of locations in Australian and Asian Airports.
Recently completed was the Award winning Qantas Singapore Lounge. It is the first of its kind anywhere in the world and Australia for Qantas. It is a lounge that incorporates all of the different tiers within one space. With the combination of Neil Perry Rockpool menu, live cooking, communal dining, full service bar and service provided by Accor, this new lounge concept transcends the typical idea of airport lounges. – AWARDS 2014 – 7th International Design Awards – Interior Design – 1st PLACE / – IDEA Awards – People’s Choice – WINNER / – IDEA Awards – International project – SHORTLISTED.
Chris Love design worked closely with all stakeholders to realise optimum outcomes. The contemporary lounge designs are by SUMU DESIGN, CAON STUDIO, PDM Singapore and menu’s are by Neil Perry.
The $25.8 million development is a community focused project with support from local, state and federal governments as well as the local education, arts, entertainment, tourism and other business sectors. The complex includes construction of 1000 seat facilities featuring theatre, music, dance and drama studio spaces, general learning areas and a commercial learning kitchen. Construction commences March 2013 for completion date late 2014. The project incorporates the former Sandhurst prison commissioned in 1861 into the theatre design, Heritage Victoria recognizes the new use will ensure the Gaol remains a vibrant and loved piece of Bendigo’s heritage.
